Slice the leeks and spring onions into thin rounds.<br \/>\n2. Heat a little olive oil in a deep pan and saut\u00e9 the leeks and onions. Lightly season with salt and stir for a few minutes until softened.<br \/>\n3.Add the chopped spinach and allow it to release its natural juices. Let it simmer until the liquids evaporate and the spinach softens.<br \/>\n4. Add the fresh herbs, then crumble the cheeses with your hands or a fork and add them to the pan<br \/>\n5. Stir for a few minutes until the cheeses melt and blend into a creamy sauce .<br \/>\n6. Once all ingredients are combined, use an immersion blender in the pan (or transfer to a blender) to fully homogenize the sauce.<br \/>\n7. Return the smooth sauce to the pan and set it aside.<br \/>\n8. Meanwhile, heat some olive oil in a small pan and saut\u00e9 the cherry tomatoes until soft and slightly caramelized.<br \/>\n9. Fill a medium-sized pot with water and bring it to a boil over high heat.<br \/>\n10. Once boiling, add a pinch of salt and then the flomari pasta.<br \/>\n11. Cook the flomari for 5 minutes (1 minute less than the package instructions to keep it al dente).<br \/>\n12. Drain the pasta, keeping some of the pasta water aside.<br \/>\n13. Reheat the sauce over medium heat, adding a bit of the reserved pasta water to adjust its consistency.<br \/>\n14. Stir in the cooked flomari along with the saut\u00e9ed cherry tomatoes.<br \/>\n15.
