Soups in autumn are a must and the closer we get to winter the more we crave them! Let’s be honest, tomato soup is one of my favorite soups this fall. But what happens when you marry a soup, specifically tomato soup, with a traditional pasta? I’ll tell you.. Is such a comfort!
In today’s recipe, we’re going to use Lemnos’ favorite pasta, Flomari, with our soup. Not only is it a nutritious and healthy dish, but it’s also such an easy and delicious recipe that you won’t be able to resist. It sounds strange but trust me you will be blown away by how delicious this soup can be!
This recipe is the epitome of comfort food! The beloved tomato and fragrant thyme combined with the traditional pasta create a “momma” dish. Tomato Soup with Flomri from Lemnos island is particularly delicious, nutritious and of course filling and it is really quick to make with easy ingredients that we all pretty much have in our kitchen.
The Flomari of Lemnos
Flomari is a local, traditional pasta of Lemnos, inextricably connected to the gastronomic tradition of the island. It is made from local wheat flour, fresh pasteurized milk and free-range eggs.
We would say that it is a local pasta but what makes Flomari so special and separates it from any other pasta is that it is made from Lemnos wheat flour and not from semolina. Lemnos Flour comes from the local wheat grown on the island so it gives a unique and distinct taste wherever it is used. Thanks to this, Flomari is a unique traditional, local, pasta with a very special and rich taste.
In Lemnos, the most common recipe for Flomari is braised with rooster. So we understand that the tomato sauce, or in our case the tomato soup we are going to make today, not only matches the Flomari but we achieve the ultimate combination. Both delicious and hearty!
Beloved Tomatoes
Tomatoes are one of the vegetables that are very pleasant to eat as their bright red colour makes them tempting plus they are also very tasty.
Apart from tasting good, tomatoes offer several health benefits. Some of the beneficial components of tomatoes are vitamins, fibre, antioxidants, minerals and trace elements that boost the immune system. At the same time, they are protective against cancer, regulate sugar levels, help reduce cholesterol and enhance skeletal health.
So, enjoying this soup is a great way to make the most of the benefits contained in tomato ingredients.
I don’t know if you’ve tried a similar recipe before but this one, it’s really delicious and you should try it

INGREDIENTS
- 200 g. Flour
- 1 large onion, finely chopped
- 1 clove garlic, finely chopped
- 550 ml vegetable stock
- 500 g fresh tomatoes (or tinned tomatoes)
- Thyme
- 1 bay leaf
- 1 teaspoon of sugar
- Salt
- Pepper
- Olive oil
PREPARATION & EXECUTION
- Preheat the oven to 180o C in the air.
- Cut the tomatoes into small pieces and place them on a baking tray.
- Then add the thyme and bake in the oven for 30-40 minutes, until the tomatoes are soft.
- Place a saucepan over a medium heat and let it burn.
- Once hot, add some olive oil, the onion and garlic and sauté for about 2-3 minutes, until soft and caramelized.
- Remove the pan from the oven and pour the roasted tomatoes, along with the pan juices, into the pot.
- If using canned tomatoes, skip steps 1,2,3 & 6 and start from step 4. So add the canned tomatoes directly to the pot (without having baked them in the oven first).
- Then, add the vegetable broth and the Flomari and season with salt and pepper.
- Once it starts to boil, add the bay leaf, thyme and sugar, stir and cover the pot.
- Allow the soup to boil for 10-15 minutes.
- Once the soup is ready, serve it hot.
