Pies hold a special place in Greek cuisine, with each region boasting its own traditional version, filled with all kinds of delicious ingredients. Most of us have cherished memories of our grandmother baking pies on Sundays—sometimes a cheese pie, sometimes a zucchini pie, always saying:
“Eat, my child, I made this pie just for you!”
That’s why we all love them!
This Vlachopita is one of the easiest pies you can make. It’s so simple that you’ll be amazed at how effortlessly you can roll out the dough. In fact, you’ll definitely make it again! If you want to use this dough for a regular pie, simply double the recipe. Thanks to Limnos Wheat Flour, your pie will be extra crispy and flavorful, making everyone ask for the recipe!
Ingredients
- 2 cups Lemnos Wheat Flour from Poriazis Family
- ¼ cup water
- 1 tbsp olive oil
- 1 tsp salt
- ⅓ tsp dry yeast
- Olive oil
- 400-500g feta cheese
PREPARATION & EXECUTION
Prepare the Dough:
- In a bowl, combine all the dough ingredients.
- Mix with your hands until you get a smooth, non-sticky dough.
- Cover and let it rest for about 40 minutes until it rises.
Prepare the Filling:
While waiting, crumble the feta cheese so it’s ready to use.
Roll Out the Dough:
- Once the dough has risen, sprinkle Limnos Wheat Flour on your work surface.
- Roll the dough into a rectangular shape.
Add the Filling:
- Drizzle olive oil over the entire surface.
- Spread the crumbled feta cheese evenly.
Fold the Dough:
- Fold the two long sides inward.
- Drizzle more olive oil and sprinkle more feta cheese.
- Fold the side edges, forming an envelope shape.
Shape the Pie:
- Roll the dough into a spiral shape.
- Press the dough accordion-style, pushing the edges toward the center.
- Place it in a baking dish (Pyrex).
Flatten the Dough:
Gently press down so the dough and filling spread evenly.
Bake:
- Preheat the oven to 180°C (356°F) with fan.
- Bake for 50-60 minutes, depending on how golden and crispy you like it.
Tips for the Best Vlachopita
- Don’t skimp on the olive oil—use just the right amount, but don’t hold back!
- Add extra cheese for a richer flavor—a mix of feta & anthotyro works beautifully!
