The following is a traditional Lemnian bread recipe, passed down through generations.

Ingredients
- 1 kg Lemnos Wheat Flour – Poriazi Family
- 30g fresh yeast (or 2 packets of dry yeast)
- 1 tsp sugar or honey
- 2 tsp salt
- 2½ cups lukewarm water (approx.)
- Olive oil (for kneading & greasing the baking tray)
- Sesame seeds (optional)
PREPARATION & EXECUTION
Step 1: Activate the Yeast
- In a small bowl, dissolve the yeast with a sprinkle of sugar and a bit of lukewarm water.
- Cover with plastic wrap and let it rest for 10 minutes until foamy.
Step 2: Prepare the Dough
- In a large mixing bowl, sift the flour and add the salt and sugar.
- Make a well in the center and pour in the yeast mixture.
- Gradually add the lukewarm water, mixing as you go.
- Knead until the dough forms a smooth, elastic ball and the bowl’s sides are clean.
Step 3: Knead & Shape the Dough
- Transfer the dough to a work surface and grease your hands with olive oil.
- Knead thoroughly until the dough is pliable and no longer sticky.
- Shape it into a loaf, place it in a greased baking tray, and cover well.
- Let it rise until doubled in size.
Step 4: Bake the Bread
- Preheat the oven to 180°C (356°F).
- Using a knife, score the top of the dough in 2-3 places.
- Sprinkle with flour or sesame seeds if desired.
- Bake for 45-50 minutes, until the bread pulls away from the edges of the pan and feels light.
Step 5: Enjoy!
Remove from the oven and let cool slightly before slicing.
