Who doesn’t love pizza? How many times have you searched for the perfect pizza dough recipe but weren’t satisfied with the results? Or tried making your own pizza base, only to feel that something wasn’t quite right?
No worries! Today, we’ll show you the easiest way to achieve a guaranteed success.
It’s truly amazing how simple ingredients like flour, yeast, water, and a little olive oil can create endless flavor combinations.
Of course, the key to an excellent pizza dough lies in the quality of the ingredients, especially the flour—because flour truly makes the difference. And in this case, the difference is in its incredible taste.
For my dough, I chose Limnos Wheat Flour from the Poriazi Family, which is rich in protein, free of preservatives or additives, and provides the perfect texture along with a pure, rich flavor.

The Secret Ingredient: Limnos Wheat Flour This flour is made from the hard wheat of the local “Limnos” variety, cultivated by the Poriazi family and their partner farmers since 1981 in the volcanic soils of the island.
It’s also ideal for making bread, homemade pasta, and pies.
I’m even tempted to bake a loaf of bread with it soon!


Ingredients
- 400g Lemnos Wheat Flour from Poriazis Family
- 1 packet of dry yeast
- 260ml lukewarm water
- ½ tsp sugar
- 3 tbsp olive oil
- 1 tsp salt
For Garnishing
- Mushrooms
- Turkey slices
- Shredded mozzarella
- Freshly ground black pepper
- oregano, and olive oil
PREPARATION & EXECUTION
- Activate the yeast: Dissolve the yeast and sugar in lukewarm water and let it sit for 10 minutes.
- Prepare the flour: In a bowl, mix the flour with the salt and create a well in the center.
- Mix the ingredients: Pour the yeast mixture and olive oil into the well, then slowly mix from the outside in.
- Knead the dough: Continue kneading until the dough is smooth and elastic. If needed, add a little more lukewarm water (I had to!).
- Let it rise: Shape the dough into a ball and place it in a lightly greased bowl. Cover with plastic wrap and a clean towel, then let it rise for 1 to 1.5 hours in a warm place until it doubles in size.
- Second knead: Once the dough has risen, knead it again briefly and set it aside while you prepare your toppings. You can roll it out by hand or use a rolling pin for a thin and crispy base.
- Shape and top the dough: Form your dough into your preferred shape and spread the tomato sauce evenly over the surface. Add the mushrooms and turkey slices, then sprinkle the shredded mozzarella on top.
- Season: Finish with a pinch of black pepper and oregano, and drizzle with a little olive oil.
- Bake the pizza:Preheat the oven to 220-230°C (428-446°F). Start baking on the lowest rack of the oven to ensure a crispy base.
- If needed, move it to the middle rack towards the end of baking to get a nice color on top.

Notes & Tips:
Baking tip: Placing the pizza on the bottom rack first helps cook the base evenly, and then moving it up will brown the top perfectly.
Topping variations: If you don’t like the toppings we used, feel free to swap them out for anything you prefer! This dough works well with any topping combination.
