1. Breadcrumbs

Instead of store-bought breadcrumbs, you can use leftover bread—even whole wheat!

  • Step 1: Cut the bread into small pieces.
  • Step 2: Βake at 130-140°C (265-285°F) for 60-90 minutes until completely dry. (A low temperature prevents burning.)
  • Step 3: Once cooled, grind in a food processor or blender until you reach the desired texture.

The finer the crumbs, the better they absorb moisture. Use them in meat products like burgers, sausages, schnitzels, or even for breading fried foods!

2. Croutons & Bake Rolls

Perfect for: soups, salads, snacks

Croutons: Best made with leftover sandwich bread (white or whole grain, preferably without preservatives).

Cut into small cubes and bake at 130-140°C (265-285°F) for 15-30 minutes until golden brown. For extra flavor, toss with olive oil, salt, oregano, thyme, rosemary, garlic, or onion powder before baking.

Bake Rolls: Best made with Thessaloniki bagels (Greek-style sesame bagels).

Slice them very thinly and toast like croutons. Many bakers intentionally make extra bagels just to turn them into bake rolls!

3. Homemade Rusks

Perfect for: soups, salads, traditional Greek “dakos”

  • Step 1: Slice stale bread into medium-thick pieces.
  • Step 2: Bake at 60°C (140°F) for 40 minutes until crispy.
  • Step 3: Add extra flavor by sprinkling with anise, cinnamon, thyme, or rubbing a garlic clove on each slice.

4. The Best Form of Recycling: Sharing!

If you don’t need your leftover bread, give it to someone who does:

  • Donate it to a food bank or charity that provides meals.
  • Share it with friends who have pets or use it to feed stray animals (without added salt or preservatives).
